Buying Direct

If you are new to buying beef directly from a producer, we understand all the terminology can get a little confusing. When you buy directly from us, you are buying a share of the animal - you are not buying finished boxed beef.  So if you buy a quarter, you are purchasing 25% of the animal to be processed.  Your deposit reserves your share and is a credit toward the final price.  We deliver the steer to the processor where they weigh the animal's carcass, which is how we calculate the final price.  The steer is then hung to dry age for a period of 14-21 days to enhance the tenderness and flavor of the beef.  It is then processed to your specifications (we provide our recommendations but you can customize a half or whole carcass).  We will send you an invoice for your remaining balance that must be paid while the steer is hanging.

What You Get:

You will receive an assortment of all cuts equal to your share of the carcass.  A good rule of thumb is approximately 1/3 steaks, 1/3 ground, and 1/3 roasts and other cuts.

Here is an example from a steer in early 2020.  Please note that all animals are different so cuts and weights will vary - this was an above average size steer.

Whole hanging weight: 1,140lbs
Quarter weight: 285lbs

Product:

4 Filets (8-10oz)
6 Bone-in Ribeyes (16-18oz)
6 NY Strip Steaks (12-14oz)
3 Flat Iron Steaks
6 Sirloin Steaks
2 Bavette Sirloin Steaks
3 Chuckeye steaks
4 Denver Steaks
3 Picanha Steaks
2 Mock Tender Steaks
1 Skirt Steak (whole)
1 Flank Steak
17 Cutlets (tenderized - 4oz)
1 Half Brisket
1 Half Tri-tip
7 London Broil Roasts (top round)
4 Short Ribs (2-3lb per package)
2 Osso Bucco Shanks
41lbs - Ground Beef

This example of a quarter was large at approximately 180lbs of finished product, which will take about 4-5 cubic feet of freezer space to store.

Quarters will be cut similar to above with limited ability to customize. Halves and whole beef cut sheets can be 100% customized to your liking.

*Please note this is to pay your deposit and reserve your steer.  We will let you know final price after animal is weighed.
