Pay your deposit for 1/4, 1/2, or whole beef here! Our whole beefs average 1,000lbs total (how we price) with finished product being around 600lbs. 

One-quarter: approximately 150lbs finished product

One-half: Approximately 300lbs finished product

Whole: Approximately 600lbs finished product

Carcass Price:

  • 1/4 - $7.00/lb (includes processing)
  • 1/2 - $6.75/lb (includes processing)
  • Whole - $6.35/lb (includes processing)

Cost Example:

One-quarter at 250lbs hanging weight would be $1,750.  After trimming, deboning, and aging for 14-28 days, your finished product should be around 150lbs. Most quarters will cost approx. $1,300-1,800 depending on the size of the animal.

Buying Direct

If you are new to buying beef directly from a producer, we understand all the terminology can get a little confusing. When you buy directly from us, you are buying a share of the animal - you are not buying finished boxed beef.  So if you buy a quarter, you are purchasing 25% of the animal to be processed.  Your deposit reserves your share and is a credit toward the final price.  We deliver the steer to the processor where they weigh the animal's carcass, which is how we calculate the final price.  The steer is then hung to dry age for a period of 14-21 days to enhance the tenderness and flavor of the beef.  It is then processed (only 1/2 and whole beef cut sheet can be customized - e-mail us if you would like to customize your cuts).  We will send you an invoice for your remaining balance that must be paid while the steer is hanging.  

What You Get:

You will receive an assortment of all cuts equal to your share of the carcass.  A good rule of thumb is approximately 1/3 steaks, 1/3 ground, and 1/3 roasts and other cuts.

Here is an example from a steer in early 2020.  Please note that all animals are different so cuts and weights will vary - this was an above average size steer.

This example of a quarter was large at approximately 180lbs of finished product, which will take about 4-5 cubic feet of freezer space to store. 

Quarters will be cut similar to above with limited ability to customize. Halves and whole beef cut sheets can be 100% customized to your liking.
